Apple Filling:

  • 6 apples peeled and diced (or sliced if you prefer) I used granny smith, about 5-6 cups
  • 2 tablespoon flour
  • 2 tablespoons sugar
  • 2 tablespoons brown sugar
  • ½ teaspoon cinnamon
  • ½ teaspoon vanilla
  • 1-2 tablespoons lemon juice

  • 1 cup brown sugar
  • 1 cup old fashioned oats
  • 1 cup flour
  • ½ teaspoon cinnamon
  • ½ teaspoon baking powder
  • 12 tablespoons cold butter diced into small cubes

  • Preheat oven to 350 degrees. Prepare a deep 8×8 dish or 11×7 by spraying with nonstick spray or butter the dish.
  • In a large bowl mix the apples, flour, sugars, 1/2 teaspoon cinnamon, vanilla, and lemon juice. Toss to combine until all apples are covered with flour. Transfer to prepared dish. The apples will be piled high but it’s okay because they shrink a bit as they cook.
  • In a medium bowl add brown sugar, oats, flour, cinnamon, baking powder, and butter. Use a pastry cutter or two forks or your hands to combine and crumble the mixture until it is pea-sized and crumbly.
  • Spread topping over the apples and gently pat it down.
  • Place dish on a cookie sheet in case any goodness bubbles over.
  • Bake 45-60 minutes until brown and bubbly.
  • Let cool slightly before serving as the juices are super hot.
