I suppose that in each house it will be called in some particular way, but for me, the potatoes in the peloton were very thin and crispy chips, dipped in homemade fried tomato that my mother made as a starter or as a garnish. Remembering this dish, it has occurred to me to combine it with Iberian pork and I have prepared this recipe for Iberian pork marinated with potatoes in the peloton that I hope you like.
Normally I like to use the whole Iberian pork tenderloin to roast it in the oven at once and get a very juicy meat as in the presa recipe with oyster and mushroom sauce, but today I used it filleted, with a delicious homemade marinade and cooked on the grill.

How to make Iberian pork with potatoes to the peloton

The first task is to prepare a homemade fried tomato, for which you must fry 1 kilo of ripe tomatoes cut into pieces, adding, when they have been in the pan for 30 minutes, half a tablespoon of salt and a tablespoon of sugar. Leave for another 30 minutes, stirring occasionally, and grind with the mash, to obtain the richest fried tomato, which in this case does not have onions, peppers or any other product other than fried tomato.
Peel the potatoes and cut them very thin with a mandolin or a sharp knife. Let it soak for 10 minutes so that the starch leaves and they are ready to fry. Fry for 15 minutes stirring occasionally so that they do not stick to each other and remove when they have a beautiful golden color.
Cut the Iberian pork prey into thick fillets and then divide them into square pieces of more or less 2×2 cm. Mark them in the pan and when they change color, turn them over and add marinade spices. I use a commercial mix that has paprika from La Vera, garlic powder, salt, oregano and bay leaf but you can make your own homemade mix.
Once the meat is ready, all that remains is to present the dish, which we will do by putting the potatoes in a deep dish, to cover them with the tomato spread on top and finishing with the pieces of marinated Iberian pork. It should be brought to the table quickly before the tomato softens the potatoes, which should arrive crispy.

Iberian pork marinated with potatoes to the peloton is an excellent dish to prepare when you return from work, since if you have the fried tomato prepared in advance, it will be ready by the time the potatoes are fried.
